Phoenix Dancong is often described as “the perfume of tea,” but its origin is the result of a long and intricate process of cultivation and refinement. The transformation from wild tea to cultivated varieties spans more than a thousand years.
Fenghuang Mountain in Guangdong is both the homeland of the She ethnic group and the birthplace of oolong tea. Before the Southern Song Dynasty, two wild tea varieties existed here: Oolong Tea and Hongyin Tea. As the She people migrated, Oolong Tea spread to Fujian, while Hongyin gradually evolved into what we now know as the Phoenix Shuixian population.
From Wild Tea to Fragrance Types
Phoenix Shuixian tea trees reproduce through seeds, making natural mutations common. As a result, each tree develops its own distinctive aroma and flavor profile.
During the late Qing Dynasty, under the reign of Emperor Guangxu, Phoenix tea trees spread to Southeast Asia and beyond. Tea farmers began selecting and propagating outstanding individual trees, eventually creating the many fragrance types of Phoenix Dancong known today.

“Phoenix Dancong originates from outstanding individual Shuixian plants. Each tree has its own unique traits. Because they are harvested and processed separately, they are known as ‘Dancong.’ Phoenix Dancong is a collective term for many exceptional individual strains.”

1. Wild Hongyin — The Earliest Origin
History
Wild Hongyin is the earliest known tea from Fenghuang Mountain and is estimated to be at least 1,000 years old. It grows only in remote mountain areas above 800 meters, where harvesting is extremely difficult. It is considered the ancestor of Bird’s Beak Tea, which later evolved into Phoenix Shuixian.
Evolution
Wild Hongyin is a wild tea tree that reproduces sexually. It grows naturally in rugged mountain environments and maintains remarkable genetic diversity.

The variety was officially named “Phoenix Shuixian” in 1956 and is now recognized as a genetically diverse local tea population.

Phoenix Shuixian is a cultivated tea population with abundant genetic diversity. It reproduces primarily through seeds, resulting in considerable variation in leaf characteristics and flavor.
