How To Brew Chai

• Teaware: Small Chaozhou Shoulahu teapot (<120ml) or thin-walled gaiwan (1 gaiwan + 3 cups)

• Water Temperature: 100°C (boiling)

• Tea-to-Water Ratio: 1:15–1:20 (¾ vessel filled with dry leaves)

• Method: Quick in, quick out for the first 4–5 infusions; gradually extend steeping afterward

• Tip: Use purified or lightly mineralized spring water for best results
